The best apples come from a small area in the Calvados department: the Pays d'Auge. These apples were also used for Busnel. Only the old, traditional stills are used here. The Normans claim that the tastiest Calvados are made here. Calvados is a protected name. Only apple distillates from this region are allowed to bear the name Calvados and is the equivalent of the Grande Champagne from the Cognac region. Busnel can rightly call itself Calvados.
